Learn the Cooking Basics - Basic Cooking Techniques

My name is Chef C. Thomas "Chuck" Manos. I am a graduate with
highest honors from the Scottsdale Culinary Institute, Alpha Beta Kappa for my studies and current member
of the Le Cordon Bleu Alumni In-Circle.
I am Greek by nationality, trained in Classical French Cuisine and have extensive practical
experience in Thai Cuisine.
My Grandfather came to the US from Crete, Greece, eventually
locating in Phoenix where he opened a family restaurant. Like my cousins, I have fond memories of the
times spent with him at the restaurant.
I had a long history in the food service industry, both front and back house, which finally
led me to my studies at the Culinary Institute. Following graduation, I returned to
Malee's on
Main to continue my studies
as underchef to Phannee Plabprasit learning the intricacies of Thai
Cuisine.
I accepted a position as Personal Chef and Estate Manager to a
gentleman in Dublin-Muirfield, Ohio and although it was a great experience, travel was not an option and
I moved back into the kitchen.
I worked as an
interim Chef /Instructor with PDI (Professional Domestics Institute), training house
managers and staffs in formal dining and preparation.
I accepted a position with Scottie MacBean Coffee
Roasteries, Inc., out of Worthington Ohio as Executive Chef where I created a Cafe and Bakery
offering fresh baked breads and pastries.
Upon my return to Phoienix from Ohio, I once again joined the
staff at Malee's.
In early 2000, under contract, I served as Executive Chef for
Jax Thai Bar in downtown Tempe, AZ. I developed the menu and trained the kitchen staff
in Thai cuisine.
I recently released a DVD for the home cook utilizing the
basics of food preparation for those with little or no experience to the home cook who wants to further
their understanding of cooking procedures.
Later this year I will release
"Learn Basic Thai Cuisine" as the second
DVD in my cooking series.
I have a varied career in food service and
love to share with those who like to
learn.
